Samphire Grass
Oil and protein-rich samphire is a name for a number of types of low growing, salt resistant plants. Most often found is marsh samphire, which, as the name suggests, grows in salt marshes. The bright green stems appear leafless, and are sometimes confused with seaweed. Closer inspection reveals almost miniature asparagus-type stems, which are harvested when young and only a few inches high. Inside the stem is a tough core that is inedible; after cooking the flesh is pulled off this. These plants taste salty so do not add any more salt when cooking them; and always wash well in cold water before eating raw or cooking.
