Pumpkin Seeds
Pumpkins, as well as having tasty flesh, have seeds which can eaten as a snack, raw, with salt or lightly roasted. Fresh seeds need to have the pith washed from them, which reveals white flat hull enclosing a green kernel.
Pumpkin seeds are a good source of manganese, copper, zinc, phosphorus, magnesium and iron, as well as vitamin K.
