Flat Leaf Parsley
Flat leaf parsley, with its fine almost fern-like leaves, is a source vitamin A, C, iron, potassium and folate, is often used as a garnish. It doesn't stand the heat as well as curly parsley but is easier to wash and chop, and it frequently found in dried form. Used late in cooking to preserve its flavour, it is a useful herb, although mild. It is a a component of bouquet garni and 'fines herbes'. Used fresh, it goes very well with potato dishes, with egg, sauces, there aren't many dishes that wouldn't benefit from adding parsley.
